Watermelon Salad with Feta, Blueberries and Mojito Vinaigrette
Watermelon Salad with Feta
- 1 seedless watermelon, peeled and cut into cubes
- 1 red onion- shaved
- 1 pound feta- crumbled
- 2 pints blueberries- washed and dried
- 1 cup Mojito Vinaigrette
- *optional- ¼ cup chopped mint for garnish
Toss watermelon, onion, feta and blueberries. Drizzle with dressing and garnish with mint.
- ½ cup chopped mint
- 2/3 cup honey
- ¾ cup extra virgin olive oil
- Juice and zest of 7 limes
- Salt and pepper to taste
Combine ingredients in a blender or whisk together by hand. Season to taste with salt and pepper.
